after indulging in the decadent bananas foster many times at dadeo restaurant in edmonton, finally an attempt at flambé!
no worries, the fire extinguisher was close at hand just in case…
first, we watched a video podcast of flambé in action (.wmv), produced by red deer college’s hospitality & tourism department.
next, we found a couple of recipes online, the most authentic coming from brennan’s restaurant in the french quarter where this sinful dessert originated.
and then…
we gathered the ingredients: butter, brown sugar, cinnamon, banana liqueur (we used cointreau), bananas, dark rum
we caramelized and reduced the ingredients, slightly softened and browned the bananas, and then for the rum…
…our first attempt at flambé proves successful — next time bigger flames! remember to wear the ove glove ;-)
serve over vanilla ice cream. yum!
during the next fortnight or so, i will be celebrating discardia, a floating holiday which “takes place in the time between the Solstices & Equinoxes and their following new moons” — so between june 21st (summer solstice) and july 14th (new moon) i will be celebrating… nothing!
